Easy, quick meals are something I can't live without! I just never seem to have enough time in the day and there's no way I can come home and cook a big fancy meal that takes a lot of time.

- I find a lot of great quick recipes. I also like to find things that I usually have all the ingredients on hand - that way I don't have to make a special trip to the store for it!
These two recipes were must-makes for me! The easy marinated chicken has a great combo of ingredients that I knew would taste great. I actually modified the side dish so my egg-allergic husband could enjoy potato salad for the first time!
After I made our lunches for work - I threw this together quick - it only took 5 minutes!
I mixed it all up and then poured it over the chicken. The recipe said it could do a lot more chicken than this - but there's only two of us - so I just used it all on what I had. They were big chicken breasts though!
I have to say - that's some pretty chicken! Now - let's make some tater salad...
I boiled some Yukon Gold potatoes...
Throw some fresh veggies on the plate and voila - dinner is served! The chicken took about 20 minutes to grill and I was able to make the potato salad while the chicken grilled.
I can tell you - this recipe combo was 100% a success! It's not just the fact that I enjoyed it - it's the fact that my husband asked for seconds! I suspect that most of the time he doesn't love my cooking - his favorite things are plain meat & potato meals - and I like to make casseroles. This Easy Marinated Chicken & Sour Cream Potato Salad was right up his alley!
The easy marinated grilled chicken had a wonderful flavor - the mustard gave it some bite but the brown sugar gave it a rich sweetness. I would definitely use this marinade recipe again. I can imagine marinating boneless thighs, then melting swiss cheese on top for some juicy grilled chicken sandwiches!
The sour cream potato salad was fun as well since most potato salad has mayonnaise - so Larry probably had never had it! Now we've got a potato salad recipe that he can eat and that he loves!
Easy Marinated Chicken (adapted from craftquickies.com)
Ingredients
- 1/2 cup packed brown sugar
- 6 Tablespoons olive oil
- 3 Tablespoons Zatarain's Creole Mustard
- 4 Tablespoons apple cider vinegar
- 4 Tablespoons lemon juice
- 3 teaspoons minced garlic
- 1 1/2 teaspoon salt
Instructions
- Combine all ingredients in a bowl and wisk.
- Add raw chicken and cover.
- Marinate overnight if possible.
- Grill!
Sour Cream Potato Salad (adapted from eMeals.com
)
Ingredients
- 2 1/2 pounds Yukon Gold potatoes, cut in quarters
- 2 shallots, finely chopped
- 1 cup sour cream
- 2 Tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Bring potatoes to a boil in salted water
- Simmer 12 minutes or until tender; drain & cool briefly
- Add shallots, sour cream and lemon juice; toss to combine
- Sprinkle with salt & pepper and toss
