It's recipe time again! This time it comes not from a magazine or the interwebs - it comes from my Mom! My Mom is a baker - always has been, always will be. She makes a meatloaf so awful that a stray cat wouldn't even eat it (seriously - one of my favorite childhood memories). But my Mom - well she can bake her little a** off! (She's very tiny - 5'1".)
First cream the butter & sugar - obviously works best with softened butter. Then add the flour, salt, baking powder & milk and mix some more.
You can use canned, frozen or fresh fruit. Typically I use frozen but I didn't have time to wait for them to thaw so I went with canned. Drain 4 cups of fruit (drain them really well) and put them in a baking dish. I usually use square.
Then spread your batter on top of the fruit - make sure it covers all of the fruit.
The secret ingredient - BOILING WATER! Most people think I'm crazy when I mention this - but it's the key! Pour 1/4 cup over the sugar - be sure you get every bit of sugar dampened with the water. Don't spread it though - just pour very slowly to make sure it all gets covered.
I have only used peaches - but I'm sure you could use berries, etc...

Mom's Peach Cobbler
My mom's famous peach cobbler recipe that came over on the wagon train. This peach cobbler has a crunchy crust that you'll LOVE!
Prep time: 20 minutes
Cook time: 45 minutes
Total time: 1 hour
Ingredients
- 4 cups fruit - sliced (frozen, fresh, canned - whatever)
- 3/4 cup sugar
- 1/2 cup butter
- 1/8 tsp salt
- 1 cup flour
- 1 tsp baking powder
- 1/2 cup milk
- 1/2 cup sugar
- 1 tablespoon cornstarch
- pinch salt
Cooking Directions
- * Arrange sliced fruit in baking dish sprayed with cooking spray
- * Cream 3/4 cup sugar with 1/2 cup butter
- * Add salt, flour, baking powder and milk to make a batter
- * Spread the batter over fruit
- * In a separate bowl, mix 1/2 cup sugar, cornstarch & pinch of salt
- * Sprinkle evenly over batter
- * Pour 1/4 cup boiling water over ALL of sugar - be sure to cover every grain of sugar! This is where the magic happens!
- * Bake at 375 for 45 minutes

Looks a lot like the recipe I have (from my great gramma) for Blueberry Buckle. It is wonderful ala mode :) This is a the first time I have see another recipe like it. I never even imagined using anything other than blueberries.
