Food Hussy Recipe: Mom's Triple Berry Cobbler for the 4th of July!

I love blueberries - I just do - in pancakes and in muffins - so how about in cobbler?! My #1 recipe is my Mom's Peach Cobbler - and it's amazing. There's a magical sugary crust that cannot be matched. So how would it be with blueberries and raspberries? Let's find out!

Before we get to the eating - let's talk about the great stuff I got to make this berry cobbler! I stopped at Kroger and got all of these great Simple Truth Organic products to make my Mom's Cobbler.

Those berries on their own just look beautiful don't they?! I bought extra blueberries because they are my favorite and added them to the Triple Berry mix. With this cobbler you can use fresh, frozen or canned - I recommend frozen.

It's easy to make - you just sprinkle a little flour on the berries - it's just to thicken the sauce a little and keep the bright berries from coloring the batter too much. Then you top with the batter (egg-free of course for us). After that cover the batter with sugar and then sprinkle boiling water on all of the sugar. This is the KEY STEP to making this perfect! The sugar and water make a crunchy crust that is amazing!

I am making the cobbler for a little pre-holiday get-together we're having. The weather is so nice - you can't help but get on the deck and enjoy it!

I picked up some fried chicken from Kroger while I was there - I like to make the cobbler - but I can't make a whole meal! Ain't nobody got time for that! hahaha The fried chicken at Kroger is great - it's always fresh and only $8 for an 8-piece pack. (And - no eggs!)

You know you wish you were invited! 

They also have 3 lb salads in the deli area to choose from - I got the Egg Mustard Potato Salad - cuz I love this stuff! They also had cole slaw, macaroni salad and baked beans.

 And then - the cobbler - it was amazing!!!! Warm, crunchy, fruity - so delicious! And the fruit is tart and tangy but then the cobbler is sweet - oh it's such a good combination. We all had full bellies after this lunch!
 And hey - a little whipped cream doesn't hurt either?! 



Mom's Triple Berry Cobbler

My mom's famous cobbler recipe that came over on the wagon train. This time with Triple Berries and still that magical crunchy crust that you'll LOVE!

Prep time: 20 minutes
Cook time: 45 minutes
Total time: 1 hour
Ingredients
  • 4 cups fruit - sliced (frozen, fresh, canned - whatever)
  • 3/4 cup sugar
  • 1/2 cup butter
  • 1/8 tsp salt
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 cup milk
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • pinch salt
Cooking Directions
  1. * Arrange sliced fruit in baking dish sprayed with cooking spray
  2. * Cream 3/4 cup sugar with 1/2 cup butter
  3. * Add salt, flour, baking powder and milk to make a batter (if your batter isn't spreadable - add a little more milk) 
  4. * Spread the batter over fruit
  5. * In a separate bowl, mix 1/2 cup sugar, cornstarch & pinch of salt
  6. * Sprinkle evenly over batter
  7. * Pour 1/4 cup boiling water over ALL of sugar - be sure to cover every grain of sugar! This is where the magic happens!
  8. * Bake at 375 for 45 minutes (or until the cobbler topping is done - test like you do cake - toothpick in the center - if it comes out clean - it's done - should be golden)
